Sticky Baby Back Ribs with Bourbon Barbecue Sauce
Fall-off-the-bone baby back ribs smoked low and then lacquered in a sticky bourbon barbecue sauce. Tender, sweet, smoky and gloriously messy.
Ingredients
Serves 4- 2 rack baby back pork ribs
- 1/3 cup brown sugar
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 cup ketchup
- 1/3 cup bourbon
- 2 tbsp apple cider vinegar
- 1 tbsp kosher salt
- 1 tsp black pepper
Instructions
- 1
Peel the membrane off the back of the ribs and coat with a rub of brown sugar, paprika, garlic powder, salt and pepper.
- 2
Smoke the ribs at 250 degrees F for 3 hours until the bark sets.
- 3
Wrap in foil and cook 1.5 hours more until the meat pulls back from the bones.
- 4
Simmer ketchup, bourbon and vinegar into a glossy barbecue sauce.
- 5
Unwrap the ribs, brush generously with sauce, and grill 20 minutes to set a sticky glaze.
- 6
Rest 10 minutes, then slice between the bones.
