Smash Burgers with Charred Onions and Special Sauce
Craggy-edged smash burgers with lacy crisp beef, melted American cheese and griddled onions on a toasted bun. Fast-food nostalgia elevated to a craft.
Ingredients
Serves 4- 1.5 lb ground beef (80/20)
- 4 brioche burger buns
- 4 slice American cheese
- 1 yellow onion
- 1/4 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp dill pickle relish
- 2 tsp kosher salt
- 1 tsp black pepper
Instructions

Stir together mayonnaise, ketchup and relish to make the special sauce, then set aside.

Divide the beef into loose balls without overworking it.

Heat a griddle or cast-iron pan until ripping hot and lay a thin bed of sliced onions where each patty will go.

Set a beef ball on the onions and smash hard with a spatula until thin, then season with salt and pepper.

Cook 2 minutes until the edges are lacy and crisp, flip, add cheese and cook 1 more minute.

Toast the buns, spread with special sauce, and stack the patties to serve.
