Serves 2- 1 lb boneless, skinless chicken breasts
- 1/2 cup full-fat coconut milk
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon ginger powder

- 4 cups cauliflower florets
- 1/4 cup fresh cilantro
- 1 tablespoon olive oil

While chicken cooks, prepare the cauliflower rice. In a microwave-safe bowl, combine chopped cauliflower florets with olive oil, salt, and pepper.
