Smoky Chipotle Black Bean Tacos

Ingredients
Serves 4- 2 can black beans
- 2 chipotle pepper in adobo
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 8 corn tortillas
- 2 cup red cabbage
- 1 lime
- 1/2 cup sour cream
- 1/4 cup fresh cilantro

- 1/2 medium red onion
Instructions

Drain the black beans and add them to a skillet with the minced chipotle, cumin, and smoked paprika.

Simmer over medium heat for 8 minutes, mashing some of the beans to thicken, and season with salt.

Stir the lime juice and a pinch of salt into the sour cream to make a quick crema.

Thinly shred the cabbage and toss with a squeeze of lime for a fresh slaw.

Warm the corn tortillas over an open flame or dry skillet until lightly charred.
