Smoky Chargrilled Sirloin with Charred Scallion Butter
A thick top sirloin grilled to a smoky char and finished with a compound butter of charred scallions and lime. Big beef flavor on a weeknight budget.
Ingredients
Serves 4- 2 lb top sirloin steak
- 6 scallions
- 5 tbsp unsalted butter
- 1 lime
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 2 tsp kosher salt
- 1 tsp black pepper
Instructions

Char the whole scallions over the grill until blackened, then chop and fold into softened butter with lime zest and a pinch of salt.

Season the sirloin with smoked paprika, garlic powder, salt and pepper.

Grill the steak over high heat 4 minutes per side for medium-rare, rotating once for crosshatch marks.

Rest the steak 7 minutes on a board.

Slice against the grain into thick strips.

Top the warm slices with a spoonful of charred scallion butter so it melts into the meat.
