Loaded Sweet Potato with Black Beans

Serves 2- 2 large sweet potatoes
- 1 can black beans
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 avocado
- 1/4 cup sour cream
- 1 lime
- 2 green onion

- 2 tbsp fresh cilantro
Instructions

Pierce the sweet potatoes all over and roast at 425F for 45 minutes until soft.

Warm the drained black beans with the cumin, chili powder, and a splash of water until saucy.

Stir the lime juice and a pinch of salt into the sour cream for a quick crema.

Split each roasted sweet potato lengthwise and fluff the insides with a fork.

Pile the smoky beans into the potatoes.
