Lemon-Oregano Grilled Chicken Souvlaki
Cubes of chicken marinated in lemon, oregano and garlic, threaded on skewers and charred over the grill. Juicy, herby and endlessly summery.
Ingredients
Serves 4- 1.5 lb chicken thighs, cubed
- 3 tbsp lemon juice
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 3 clove garlic cloves, minced
- 1 tbsp red wine vinegar
- 1 tsp sea salt
- 0.5 tsp black pepper
Instructions

Whisk lemon juice, olive oil, oregano, garlic, vinegar, salt and pepper into a marinade.

Toss the chicken in the marinade and refrigerate at least 30 minutes.

Thread the chicken onto skewers.

Heat a grill to medium-high and oil the grates.

Grill the souvlaki 5 to 6 minutes per side until charred and cooked through.

Rest briefly and serve with lemon wedges.
