Coastal Herb-Roasted Chicken with Preserved Lemon
A whole chicken roasted with preserved lemon, thyme and rosemary tucked under crisp golden skin. Mediterranean brightness in every juicy bite.
Ingredients
Serves 4- 4 lb whole chicken
- 2 tbsp preserved lemon, chopped
- 2 tbsp fresh thyme
- 1 tbsp fresh rosemary
- 4 clove garlic cloves, smashed
- 3 tbsp olive oil
- 1 lemon, halved
- 1.5 tsp sea salt
Instructions

Heat the oven to 425F.
- 2
Mash preserved lemon, thyme, rosemary, garlic and olive oil into a paste.

Loosen the chicken skin and rub the herb paste underneath and all over.

Season with salt and stuff the cavity with the halved lemon.

Roast for 70 to 80 minutes until the juices run clear and the skin is crisp.

Rest for 10 minutes before carving.
